Peanut Butter Banana Bites
Slice two bananas to about ½ -inch slices. Freeze slices in a single layer on parchment or waxed paper for about 20-30 minutes. Remove slices from freezer. Top half the slices with ½ teaspoon of peanut butter each. Top the peanut butter with the remaining slices to “sandwich” the peanut butter. Freeze for two hours before serving. Store in freezer.
Apple “Donuts”
Core one apple, and slice into ¼ inch rings. Spread your favorite nut butter (mine is almond) onto the ring. Top with unsweetened coconut, cinnamon, dark chocolate chips, or dried fruit.
Fresh Fruitsicles
Blend 2 cups of berries or melons in a blender until smooth. Add mixture into popsicle molds or ice trays. Freeze completely.
Banana “ice cream”
Chop and freeze two bananas. In a blender or food processer, add ¼ cup of your favorite milk (add more as needed) and gently blend until you reach a creamy texture. Make this even more decadent by adding cinnamon, dark chocolate chips, nut butter, or nuts!
