Root Vegetable Hash with Apple
Ingredients
2 parsnips
2 carrots
2 rutabagas
2 apples, peeled and diced
1 yellow onion, diced
2 tablespoons coconut oil
¼ cup pecans, toasted, chopped (optional)
½ teaspoon salt
fresh ground black pepper
Instructions
In a large soup pot, bring 8 cups of water up to boil.
Peel and dice the parsnips, carrots and rutabagas making them similar in size. Add to the billing water and cook until just tender, about 5 minutes.
Drain and spread out and pat dry with dish towel.
In a large skillet heat the coconut oil over medium high heat. Add the onion and sauce until translucent about 3-4 minutes.
Add the diced veggies and the diced apple. Sprinkle with the salt and fresh black pepper. Cook without stirring for 2 minutes. Stir and let cook 2 minutes without stirring to start to create a crust by caramelizing the veggies. Do this until the veggies are tender, 20-25 minutes.
Top with the chopped pecans.
